Organische Säuren (2.6-3.6%), Phenolsäuren (bis 0.5%), Proanthocyanidine (kondensierte Tannine), Anthocyane (rote Pigmente; 13.6-171 mg/100 g frische Früchte), Flavonole, Iridoidglykoside, Triterpenoide, Vitamine, Zucker und komplexe Kohlenhydrate (3.6-5.0 g/100 g), Cellulose, Pektin und Hemicellulose.

- | Anthocyane: Arabinose-, Galaktose- und Glukose-3-O-Glykoside der Aglykone Cyanidin, Peonidin, Malvidin, Pelargonidin, Delphinidin und Petunidin: v.a. Anthocyan-Galactoside, dann Anthocyan-Arabinoside und sehr geringen Mengen Anthocyan-Glucoside. |
- | Flavonole: v.a. Quercetin und Myricetin, auch Kaempferol und ihre 3-O-Glykoside. |

- | Vitamine: hoher Gehalt an Vitamin C (Ascorbinsäure, 200 mg/kg frische Beeren). |
- | Zucker: hohes Glukose-Fruktose-Verhältnis, Sorbitol nur in Spuren, lösliche Oligosaccharide wie Xyloglucane und Arabinoxyloglucane. |
